I’ve had a similar issue, and one thing that helped was creating a designated play area for my cat with plenty of interactive toys. It kept him entertained and distracted from the counters. Also, I found that using double-sided tape in the areas he likes to jump on discouraged him from going there. You could try that and see if it helps!
